Company History Timeline


  • Cellar Tours is founded by Des and Genevieve McCarthy in Madrid, Spain as a travel agency and tour operator specialized in gourmet wine vacations
  • Ferran Adrià, Spain’s most famous chef, is featured on cover of New York Times magazine which leads to a burst of interest in Spain as a culinary destination
  • First Spanish regions included on tours include Barcelona and Catalonia; San Sebastian, Basque Country and La Rioja; Madrid and Ribera del Duero
  • First tours are a mix of scheduled tours and private chauffeured tours, with the majority of clients from USA and UK


  • Cellar Tours expands into Portugal, featuring new wine tours of Alentejo and Douro valley and gourmet tours of Lisbon and Oporto
  • The company goes more upmarket and eliminates scheduled tours to focus solely on private, luxury chauffeured tours
  • New Spanish regions featured on tours include Somontano, Txakoli and Priorat


  • Italy is added to the portfolio and is an instant bestseller. Initial regions where we introduced luxury wine tours included Tuscany, Piedmont, Lake Garda, Franciacorta, Valpolicella and Lake Como
  • Main profile of clients is couples with private chauffeurs
  • More demand for private cooking classes and we sourced dozens of personal chefs around Europe offering VIP culinary experiences to couples


  • New high end tours added to the portfolio including Umbria, Veneto and Campania (Italy); and Bierzo, Ronda and Montilla/Moriles in Córdoba (Spain).
  • We added unique gastronomic experiences apart from cooking classes to our private tours including tapas tours, truffle hunting, olive oil tastings, balsamic vinegar “Acetaia” tours, and Artisan Cheese Masterclasses.


  • Requests for corporate hospitality increased and we arranged many original tours for our clients like: visiting the wineries by helicopter, touring the wine country by vintage car, medieval evenings in 18th century wine estates and supremely entertaining wine tasting barbecues accompanied by live musicians (Flamenco, Jazz and Napoletano)
  • Honeymoons and Wedding Anniversaries were the other most popular requests (for luxury food and wine focused tours) and we became much more specialized in this area.


  • We developed many more luxury food and wine tours for more regions in Italy including Sicily, Friuli, Marche and Valtellina; and Spain (Galicia´s Albariño wine .country and Ribeira Sacra and more boutique wine cellars in the Penedès)
  • Diverse range of clients including countries such as India, Russia and Japan, in addition to traditional markets like USA, Canada, UK and Australia.

  • We launched fabulous new gourmet tours in Ireland, home to a busy Slow Food chapter; artisan cheese producers and smokehouses; and luxury castles & manors.
  • We did extensive research in southwest France for new food and wine tours and visited over 100 wine chateaux, selecting only the best for our tours.
  • A new food, wine and travel quiz was created on our website, with winners receiving prizes announced in our quarterly newsletters.


  • We launched new ultra luxury gourmet tours in Bordeaux, Biarritz, Southwest France, Perigord, etc
  • We have dedicated more time and resources to Social Media, Facebook, Twitter, FoodBuzz
  • A new food, wine and travel quiz was created on our website, with winners receiving prizes announced in our quarterly newsletters.


  • New private tour programs include: Asturias, Galicia, Cantabria (Green Spain) Gourmet Tours with artisan cheese tastings, cider tastings, cooking classes and wine tasting; Costa Brava and Emporda wine tours; Gourmet Algarve Luxury tours; Loire Valley Wine Tours, Sicily wine tasting day excursions in Syracuse, Taormina, Palermo; Emilia Romagna Foodie tours; Ireland Cheese Tours; and Ireland Luxury Gourmet Golf tours.
