Parés Baltà Winery Guide

Founded in the 1930s, Parés Baltà is a small yet exceptional winery nestled in an area with a wine-producing heritage dating back to the 1700s. As a family-owned enterprise, the winery takes pride in crafting exquisite Cavas and still red and white wines. Its vineyards span five premium estates, covering 176 hectares of carefully cultivated, low-yielding vines; blessed with a mild microclimate, these vineyards are situated just a stone’s throw away from the Mediterranean Sea in the prestigious Penedès and Cava appellations.

Parés Baltà’s winemaking prowess shines through its use of a diverse range of grape varietals. From the classic Cava grapes of Macabeo, Xarel-lo, and Parellada to the velvety richness of Syrah and Cabernet Sauvignon for red wines, and even the incorporation of non-traditional Catalan grape varietals like Chardonnay and Gewurztraminer for oak-aged whites, the winery embraces both tradition and innovation in its pursuit of crafting exceptional wines.

While not officially certified as an organic winery, Parés Baltà employs numerous eco-friendly viticulture (biodynamic) and winemaking practices. For instance, they harness the natural fertilizing power of sheep to nurture their vineyards, demonstrating a commitment to sustainability, deep respect for the land, and a holistic approach to winemaking; Parés Baltà embraces sustainable practices that harmonize with nature’s rhythms. Furthermore, by harnessing the principles of biodynamics, they cultivate their vineyards in harmony with the surrounding ecosystem, considering the influence of celestial bodies, biodiversity, and soil health.

The outstanding wines of Parés Baltà have garnered praise and accolades in renowned international and national wine publications. Esteemed publications such as Decanter (UK), Capital (Germany), “Lo Mejor de la Gastronomia” (Spain), Vinos de España (Wines of Spain), Guia Peñin de Los Vinos de España (Peñin Guide to Spanish Wines), Weinwirschaft (Germany), and Cuisine et Vins de France (France), among many others, have celebrated the winery’s craftsmanship. Notably, the esteemed Spanish sommeliers Sr. Custodio L. Zamarra, Fernando Gurucharri, and Jose Luis Casado selected the “Dominio Cuisine 1790” wine as one of Spain’s “Mythical Wines” in the revered “Total Wine Guide 2003.” This prestigious recognition was awarded to only 35 Spanish wines, underscoring Parés Baltà’s exceptional quality and distinction in the wine world.

Parés Baltà Winery embodies a harmonious blend of tradition, innovation, and a deep respect for the land. With each sip, their wines transport you on a journey through time and terroir, showcasing the passion and dedication of a winery deeply rooted in its heritage while embracing the possibilities of the future.
